UF-KO
UF-KO is a funky, spacey, wacky "Punch-Out!!!"-inspired boxing game with a starry twist!
Follow our spaced-out main character as she gets kidnapped by a group of aliens and thrown into Saturn's fighting rings.
Use NES-based controls to block, punch, gut, and move your way up the ranks with the help of out-of-this-world sponsors and upgrades. Each playthrough is not the same as the last!
Come up victorious, avoid getting struck in orbit, and maybe (just maybe) the aliens will let you go home.

Played V0.5 and managed to beat it! Fight 14 or 15 or whatever was the final boss. Took me a bit, but after a while, I think I started getting the hang of it.

I think you can only fight the "first" (it's pretty great that the opponent is taken from different ones with their own stats and behaviour) opponent in the released version? I don't think trying to "exit" the shop does anything.
The game sounds and looks great (although the scaling in my 1920x1080 makes it blurry), the different attack animations are very nice and as the game plays pretty much like Punch Out then it's quite fun as well.
